Recipe: Garlicky mashed cauliflower

You won't miss the potatoes in this dish, trust me.  If my husband will eat it, anyone will eat it and he loved this recipe!  We all need to get more vegetables in our diet and what better way to use up a head of cauliflower and cut back on the carbs?!?!?

Recipe: Garlicky mashed cauliflower
Head of cauliflower, florets removed and cut to similar size
1 clove of garlic
1/4 cup Parmiggano-Reggiano, cut in chunks from the rind (you can use pre-shredded/grated as well as American Parmesan should that be what you have on hand)
1 teaspoon fresh thyme leaves stripped from the stem (you could also use fresh Rosemary)
1/8 teaspoon freshly ground black pepper
1/2 teaspoon Kosher salt
1-3 tablespoons butter, melted

Bring 6 cups of water to a boil.  Add cauliflower and boil on high heat for 10 minutes until soft.  Drain cauliflower and return to pot and place lid on it to keep it warm until you are ready to serve dinner.

In a food processor, grind up garlic clove, cheese and thyme.  Add in cauliflower, salt, and pepper and puree until smooth, scrapping down the sides to ensure everything is well combined.  Add butter one tablespoon at a time until desired taste and texture is reached.
