Recipe: Ganache for chocolate-covered strawberries

Just in-time for Valentine's Day or any old day as strawberries begin to come back in-season, a super simple, 15 minute recipe for chocolate-covered strawberries.



Recipe: Ganache for chocolate-covered strawberries

Ingredients:
Fresh strawberries, rinsed & patted dry
1 cup heavy whipping cream
12oz of your favorite chocolate (semi-sweet, milk, white), either in chips or chopped up

Directions:
Place cream in a small saucepan over your smallest burner and let come just to a boil over medium-high heat.  Remove from heat.

Pour in chocolate and DO NOT STIR but set aside for 5 minutes.

Using a whisk, slowly combine chocolate & cream until smooth.

Hold each strawberry by the green tops and dip/roll in the chocolate until covered nearly to the top.  Place on silt pad or parchment paper-lined cookie sheet.  Place cookie sheet in freezer for 12-15 minutes until chocolate is hardened and dip again if desired.  Note: chocolate won't return to a completely solid state, it will remain somewhat soft.
