Recipe: Frito Pie

I grew up on Frito Pie, mainly a special treat on a Sunday afternoon at the ballpark. But as a woman who is no longer a twenty-something who can eat anything and not gain a pound, I decided to try out Cooking Light's Chili Chip Pie version from a few months back. I really loved the simplicity of the recipe, I normally have all the ingredients in my pantry and those I'm out of can be replaced cheaply. I did eliminate the 1/3 cup of water and I tripled the amount of tomato paste as I found the recipe too soupy for my taste the first two times I made it and as always I added more salt.

Here's the recipe as I make it:

Recipe: Frito Pie

2 tsp Olive oil
1 pound 93% lean ground sirloin
1 cup onion, finely chopped or 1 tsp. ground onion powder
1 T crushed garlic or 4-5 cloves finely minced
1 tsp. Kosher salt
1/4 tsp. freshly ground black pepper
3/4 tsp. ground cumin
1 10oz can Rotel, undrained
1 C beef broth
4 T tomato paste (about 3/4 of the can)
2 C Frito's
1/2 C shredded sharp cheddar cheese
Additional toppings: green onion, sour cream

Heat the olive oil in a large skillet over medium heat until it begins to smoke. Add sirloin to pan (carefully) and break up into smaller chunks. Leave the meat alone for a few minutes at a time before breaking and stirring it to allow it to brown well all over. Add onion and garlic. Saute 5-6 minutes until onions are soft and translucent.

Add salt, pepper, cumin and saute additional two minutes. If using onion powder instead of raw onion, add it at this time.

Add Rotel, broth and tomato paste. Turn heat up to High and bring to a boil. Be sure to scrape up all the caramelized bits on the bottom of the pan. Cover, turn the heat down to low and let simmer for 15 minutes, stirring occasionally.

Place 1/2 C Frito's in the bottom of a shallow bowl. Ladle on beef mixture and top with 1/4 C cheese and any additional toppings you like. This recipe will generously serve four.
