3.1.09 - Weekly Meal List and Challenge Check-In

Week 3 of my new Meal Planning Challenge was also a success!

Last week was a doozy!

The meat I thawed out to make meatloaf with was... well, I'm not sure but it looked BAD so, we threw it out and ate leftovers/sandwiches that night to stay on our meal plan so, I'm still very proud of us! David took his lunch to work everyday last week, Emily & I ate at home every day last week and we all three had breakfast at home last week.

It's weird to see our freezer and pantry dwindling and not feel that impulse to go out and fill it back up but what a huge feeling of accomplishment to see all the extra money in our bank account AND not see any food go to waste each week. It's such a huge source of pride for us all - why waste money & food when you don't have to?!?!?

So, anyway, this is really working out for us all in so many more ways than we had ever thought and I'm so excited to keep going, to see if we can meet our April 18th goal!

I spent $121.87 today, only going over my $100 per week goal (oops!!!) but I needed a few items for Emily's weekly lunches/snacks this week.

Purchased:
Organic bananas
Organic plums
Organic pears
Organic green & purple grapes
Blue cheese salad dressing (2 for $7 so, I bought 2)
2lbs each of Carrots, celery, kale and green apples (for David & Emily's morning juice... I buy this every week!)
(5) Light & Fit yogurt (David's lunch each week)
Cheerios cereal (2 boxes)
Canned tuna
Whole wheat Rotini and Wheel-shapped pasta
12pk String cheese
Tea bags
Frozen french fries
2lbs Deli Ham
Bread (2 loaves)
Jarred pasta sauce (on sale 2 for $4)

Chicken Ceasar salad
Fried Catfish
Fajitas with chips & guacamole
Leftovers/sandwiches
Chicken enchiladas
BBQ Beef-stuffed baked potatoes
Honey-mustard chicken sandwiches with fries
