Thursday Thirteen

Having kids means that at some point you WILL have to play the role of The Short-order Cook, some of us play this role a lot longer than others, and as busy moms with careers, hobbies, friends, chores and errands, most of us look for ways to save time... and save our sanity!

So, this week's Thursday Thirteen, is a listing of 13 meals I make that not only Emily loves but contain healthy ingredients, including vegetables (shhhh... don't tell her!):

1. Italian sausage, spinach & provolone pizza
2. Meatloaf and steamed broccoli
3. Cauliflower & potato mash
4. Spaghetti with lots of onions, peppers, and shredded zucchini
5. Butternut squash macaroni 'n cheese
6. Turkey meatballs
7. Glazed carrots
8. Black bean & cheese nachos
9. Steamed green beans
10. Flaxseed waffles
11. Turkey goulash
12. Olive & fig tapanade on wheat crackers
13. Roasted chicken with potatoes & carrots
