Recipe: Baja Fish Tacos with Mango Salsa

You've seen my posts about Cooking Light magazine a few times on this blog but I seriously could devote my entire blog to it as it's really that good, especially for folks looking to eat healthier!

Recipe: Baja Fish Tacos with Mango Salsa

Ingredients
1 cup peeled, diced, ripe mango
1/4 cup finely chipped red onion
1 tablespoon fresh lime juice
1 tablespoon fresh, chopped cilantro
1/8 teaspoon salt
1 jalapeno pepper, seeded and minced

5 cups canola oil
3/4 cup flour
1 cup beer
1 1/2 teaspoon ground black pepper
1 teaspoon salt
1 teaspoon garlic powder
1.5lbs Halibut, cut into approximately 16 pieces 1" wide
8, 6" corn tortillas

Directions
Combine the first 6 ingredients for the Mango Salsa.  My husband HATES chunks so, I grind everything up super small into my food processor, like a spreadable paste!

Heat oil in a deep skillet (or your counter, deep fryer!) until it reaches 375 degrees. 

Wish a wisk, combine flour, beer, pepper, salt, garlic powder.  Add fish and toss to gently coat.  Remove fish from batter, letting excess drip off and add 4-5 pieces at a time to the skillet, cooking 4-5 minutes and turning occasionally.  Drain fish on paper towels.  Repeat procedure in batches with remaining fish.

Heat tortillas in the mircowave 15-20 seconds until they are pliable and slightly warm.
