Recipe: Crockpot Shredded BBQ Chicken


This is one of my favorite, go to recipes that I use mainly for chicken but have loved with pork and beef!

Recipe: Crockpot Shredded BBQ Chicken

1 1/2lbs of chicken (I use chicken breasts on the bone that are super cheap at the grocery store!)
1/2 Cup of diced, chopped or sliced yellow onion (if you are going to remove the onion as I do, a rough chop is fine)
1 Cup Ketch-up
1/4 Cup Dark brown sugar
1 Tablespoon Worcestershire sauce
1 Tablespoon Apple cider vinegar
1 Tablespoon Stone-ground, spicy or even just plan yellow mustard
1/2 teaspoon Kosher salt
1 teaspoon black pepper
1/2 teaspoon garlic salt

Combine all ingredients (excluding the chicken) in your crockpot, nestle chicken into the sauce and set your Crockpot to LOW.  Cook for 6 hours.  Remove chicken from your Crockpot as carefully as possible and separate the meat from the bones & fat.  Pour remaining BBQ sauce through a strainer, reserving the sauce and return the sauce to your Crockpot.  Shred the chicken and return to your Crockpot.  Stir to fully incorporate chicken into the sauce and serve or let set on LOW for up to 2 more hours.

I serve mine over oven-baked potatoes or on toasted buns with dill pickles along side some oven-fries!

For oven-baked potatoes:
Prick each potato 2-3 times with a fork and wrap completely in foil.  Place directly on the oven wrack in a 350 degree oven and bake for 90 minutes until soft.
