Recipe: Mascarpone Mashed Potatoes

Recipe: Mascarpone Mashed Potatoes

1 1/2lbs peeled, cubed Yukon Gold potatoes
1/3 cup fat-free milk
3 tablespoons mascarpone cheese
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper

Place potatoes in a large saucepan and fill with cold water JUST until they are covered.

Bring to a boil over HIGH heat for 15-20 minutes until they are tender when pierced with a fork.

Drain and return to the pan.  Add the milk, cheese, salt & pepper and mash to desired consistency.  Add more salt & pepper to taste.
