The most vibrant, savory, bright, burst of flavor to add to your favorite sandwich is my fresh herb spread. Just a few quick pulses in your food processor and you are in business!


Recipe: Fresh herb spread

Ingredients
1/2 C fresh arugula
1/2 C fresh parsley (leaves only, not stems)
1 Tablespoon capers, drained
1-2 cloves garlic, peeled - about 1 teaspoon
1/4 C Parmagiano-Reggiano, Pecorino Romano, or Asiago cheese, grated
2 Tablespoons Extra virgin olive oil
1 Tablespoon Lemon juice, freshly squeezed
1/4 teaspoon Freshly ground black pepper

Directions
Place all ingredients in your food processor and pulse until a loose paste forms and there are no large chunks of anything. Scrape down the sides of the bowl between pulsing to ensure it all combines well.

When making a sandwich, cut a loaf of your favorite bread, I use french, in half lengthwise and place cut-side up in a 400 degree oven for about 5 minutes until toasty and golden around the edges. Using a spatula, generously spread your fresh herb spread all over one side of the bread. Layer on your favorite toppings, we use leftover flank steak or grilled chicken and fresh cut organic tomatoes. Cut into servings and enjoy!
